Ingredientes
  

  • 5 feet medium hog casings.
  • 3 ½ lb of lean pork butt cubed.
  • ½ lb of pork fat cubed.
  • 2 teaspoons of sugar.
  • 4 teaspoons of garlic finely minced.
  • 1 tablespoon of black pepper.
  • 1 tablespoon of salt.
  • ¼ tablespoon of nutmeg freshly grated.
  • 14 teaspoons of cinnamon freshly grated.
  • 1 tablespoon of ginger finely chopped.
  • ¼ tablespoon of ground allspice.
  • ¼ tablespoon of ground thyme.
  • ½ cup of dry white wine.

Elaboración paso a paso
 

  • Grind the meat and fat together through the fine disk and mix with the remaining ingredients.
  • Stuff and twist into four-inch links.
  • Dry, uncovered, in the refrigerator for a day or two, turning them often.
  • Cook by boiling in water or chicken stock or freeze.
