Chorizo and Beans

The spicy and smoky flavors of chorizo sausage bring this bean dish to life!. 2 Tbsp olive oil
12 oz chorizo sausage
1 large bell pepper, seeded and chopped
1 onion, chopped
3 cloves garlic, minced
1 tsp ground cumin
½ tsp chipotle powder
2 (28 oz) cans pinto beans with their liquid
½ lb shredded cheddar cheese
¼ lb queso fresco (mexican white cheese) crumbled
1 (16 oz) container sour cream
10 (12 in) flour tortillas

In large skillet heat oil over medium heat. Add onion, garlic, bell pepper and heat for 1 minute. Add chipotle powder and cumin and continue cooking over medium heat until onions are just softening.

Add chorizo and cook until browned, about 5 minutes. Add beans and their juice to the mixture and bring to a simmer. Cook 20-30 minutes until warmed completely through and liquid has reduced.

Prepare tortillas by warming in oven. Top tortillas with chorizo and bean mixture, sour cream, and cheese. Serve immediately.
