Chorizo burgers are the perfect alternative to typical barbecue fare. Smoky chorizo sausage is combined with ground sirloin, onions, garlic, and spices for a burger bursting with flavors. Top with homemade Chipotle Mayonnaise for a real treat!
1 lb ground sirloin
1 lb chorizo
1 tbsp vegetable oil
1 medium onion, finely minced
2 cloves garlic, finely minced
1 tsp paprika
¼ tsp cayenne powder
1 Tbsp Worcestershire sauce
4 soft brioche buns
4 oz shredded manchego cheese
½ c. mayonnaise
2 chipotle chilies in adobo sauce
1 Tbsp adobo sauce from chipotle peppers
In large mixing bowl combine ground sirloin and chorizo, using your hands. Set aside.
Heat oil in large skillet. Add onion and garlic. Transfer to a blender and add paprika, cayenne powder, and Worcestershire sauce. Cook until onions are aromatic and translucent; add to sirloin and chorizo and combine.
Prepare grill for high heat. Form meat into 4 patties using hands and place on grill. Cook for 5 minutes or per side or until cooked through.
Prepare mayonnaise. Combine mayonnaise, chipotle chilies and adobo sauce in food processor and combine until smooth.
Assemble burgers, topping with cheese and mayonnaise. Serve immediately
