Chorizo Lentil Stew

A delicious and hearty way to cook lentils, this chorizo lentil stew is an exciting dinnertime choice. 1 tbsp olive oil
2 cloves garlic, minced
¾ lb chorizo sausage
3 stalks celery, diced
1 onion, diced
1 carrot, diced
1 c. dried lentils
4 c. chicken stock
1 (12 oz) can tomatoes or 1 large tomato, seeded, peeled, and chopped
1 tsp ground turmeric
1 tsp curry powder
1 tsp ground cumin
1 tsp sugar
salt and pepper to taste
sour cream (optional)
fresh cilantro (optional

Heat olive oil in large saucepan over medium high heat. Stir in garlic and onion and cook until aromatic, about 1 minute. Add chorizo sausage and cook until sausage begins to brown, about 5 minutes. Stir in celery and carrot and cook until celery just softens, about 4 minutes more.

Add chicken stock and lentils to pan. Season with turmeric, curry powder, cumin and sugar. Simmer 30-40 minutes or until lentils are tender and liquid has reduced to desired thickness. Add tomatoes and cook for 5-10 minutes more. Season with salt and pepper to taste.

Serve immediately. Garnish with sour cream and fresh cilantro if desired.
