  • 1/4 cup olive oil
  • 6 pounds Italian sausage links
  • 6 red bell peppers sliced
  • 4 green bell peppers sliced
  • 3 large onions sliced
  • 6 cloves garlic chopped
  • 2 28-ounce cans chopped tomatoes, with juices
  • 1 12-ounce can tomato paste
  • ½ cup red wine
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper

  • Heat olive oil in a large heavy skillet over medium high heat. Add sausage and cook until browned on all sides. Transfer to slow cooker.
  • Add remaining ingredients slow cooker; cook on low 8 to 10 hours, until softened and slightly thickened.
